Well I am glad to say that I safely made it through my last fall semester of college, and winter break is finally here! Christmas is absolutely my favorite time or year, yes I am one of "those" people who has been listening to Christmas music since Halloween..Alright so maybe even a few weeks before then. Of course there has also been lots of baking going on, and I finally have my pictures up and ready to show you some delicious recipes that I guarantee you will love. This is one of my favorite recipes that is enjoyed by so many, so I thought my present to you would be to share this awesome sugar cookie recipe. These literally melt in your mouth so I must warn you they are highly addictive. They are surprisingly easy to make so don't be afraid to get your hands dirty. These are a great idea for any Christmas party or cookie exchange.

Melt in your mouth Sugar Cookies
1 cup granulated sugar
1 cup powdered sugar
2 cups shortening
3/4 teaspoon vanilla
1 large egg, beaten
4 1/3 cups cake flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
Plain or colored sugar, for decorating

Preheat your oven to 375 degrees.
In a mixer, cream together sugars and shortening. Mix on slow speed 30 seconds, then scrape down the bowl with a spatula. Increase speed to medium and mix for 3 minutes.
Slowly add vanilla and beaten egg while mixing.
In a separate bowl, combine cake flour, baking soda, baking powder and salt. Gradually add the flour mixture to the creamed mixture, mixing on slow speed until just blended. Do not over mix.Scoop with an ice cream scoop and roll in sugar. Place on baking sheet on foil. Flatten slightly with palm of hand, or the bottom of a glass cup, which is what I use.
Bake 9 to 10 minutes. Cookies will be done when they have a light golden color and have small cracks. Be sure to watch the first batch in the oven to know the correct time.
